Does anyone know if remington F.A.S.T. folding knives are any good?
And any suggestions for a beginning collector?

I'd stay away from them personally. If you want a good quality knife, save some more money and get yourself a folder from one of the manufacturers on this board. Those Remington knives are all made with low quality steel and other materials. I wouldn't trust my fingers to one that's for sure. The better quality knives are made by companies below:
Spyderco
Kershaw/ZT
Benchmade
Chris Reeve
Buck
Emerson

What is your price range and intended use? Beginner knives that are good are the Ontario RAT1, KaBar Dozier, Spyderco Tenacious, Byrd Cara Cara, Kershaw Skyline, Leek, Shallot, etc. But we need more info for specific suggestions.

I have a Remington Fast... it's a good little knife, but I agree with the others. Save up for a kershaw, spyderco, rat etc etc...

No experience with those remington knives, but I'd suggest the same as my fellow forumites.....Spyderco, Benchmade, Kershaw, etc..

When buying knives, I always go by the saying, "you get what you pay for".

Good luck
