I'd like to reprofile my ZT 200 on the Edge Pro but the thumbstuds get in the way, can these thumbstuds be easily removed and installed back after? Thanks.

nope.
The studs are press fitted. I use a vice and a piece of wood with a hole drilled out.
Place 1 side of the stud into the hole in the wood and press it through with the vice.
Repeat it to push it back in.
I've done it 2x on mine and its still fine. I wouldn't go doing it every day though. I also put a drop of loctite on it when I'm pushing it back in. Doubt its necessary though.

I have a ZT 0200 on the way. I also have an EdgePro which I plan on using to put a 20 degree V edge on the 0200. Can you post pics depicting how the thumbstuds interfere? Thanks in advance.
If you go to low the stone will hit the stud. if your going 20 per side you will be fine. if your going 20 inclusive your gonna hit the stud.
The stones will hit it anyway when doing the heel part of the blade. I will try to post pics later.
Another tip would be to toss the stud into the freezer while you are sharpening. This will cause it to shrink ever so slightly (you would be surprised the difference temperature makes when fitting tight tolerances). You can also warm the blade up a bit to make it expand...but you do NOT want to warm it excessively for obvious reasons![]()
I didnt have this issue when I tested at around 20 per side. When I went down to 15-16 per side it started hitting.
Why not wave it and leave the thumbstud out for good?
