Removing black coating of couple of blades. Is my idea good or not?

I have two ideas.
One is to take fine grit paper and hand remove it using 400 or 600 grit to start. Don't want to harm the finish beneath it. Or is even finer grit better?

The other thought is to use Klean stripper or similar, then buff with dremel.

Knives I want to do this on are:
1] Cold Steel
2] CRKT Hissatsu
3] ZT 0200 -- maybe.

Thoughts all appreciated.
 
i have stripped cold steel recon 1 and ak-47 series with a knife, other knives may be stripped with paint stripper, it is easy and the stonewashed blade looks so pretty,

zt/ kershaw dlc is hard to remove, if you want to remove it, you have to sand it and polish to a mirror finish and it is a pain to do
 
I went from black to satin on my kabar dozer. What I did was scrape it with a razor blade to get the paint of that will leave
You with a sort of cloudy acid wash look but it will be smooth....so any way I then went at it with scotch brite pad and viola satin! I'll try and post pics tomorrow morning...

i stripped the blade and the lever lock, for ak-47 pommel, it was anodized so i sanded it off and buff with dremel buffer kit

also i have modded my cs ak-47

i think im going to do this on my ak-47 because i have been having lock issues with it. maybe the lack of a coating will solve my issue

remove the lock lever with razor and put a 800 grit sandpaper on table and sand the lever flat, that will correct any bumps then go up to 2000 grit and add a film of oil. i did that and i had no issue and it is so much smoother and easier to unlock it
 
I flatsand w/ 320 till I'm below the deepest grindline and also the mild concavity in the very rear of the blade faces, then continue finer from there. This is s30v taken to 1000:
