Removing bluing- need advice

I purchased a knife that was cold blued fron previous owner, id like to remove it. I've read that simply soaking the blade that's been blued in white vinegar will remove it. The blade steel is O1 steel, and was originally a high polished finish. I'm assuming when I soak it in vinegar it will remove bluing but ill come back to one hell of a patina, which is not what I want.

My end goal here is to restore the finish back to its original high polish as easily as possible. I would really appreciate any advice/guidance.

From my experience, Flitz metal polish will remove cold blue pretty easily. I'm sure some other polishes such as Semi-chrome would also ( maybe better ).
They would also be easy on your knife's finish.
 
Flitz or Semi-chrome would remove that cold blue without as much effort and you wouldn't have to worry about rubbing in the same direction.
Now when you get finished you might need advice on how to remove scratches lol.

I think I should've heeded your advice, but a store run was not on the agenda today... and I'm not gonna just let the knife sit there begging to be tinkered with! I will buy some flitz though for future impulse finish removing.
