Hey guys I recently got a damascus(or pattern welded) knife for a pretty good price.

It looked good when I got it but I wanted to make sure it was real so I read up on a tutorial on how to etch damascus(the tang of the knife was not etched,so I was going to etch it to see if it was real damascus).
I used hot vinegar but kinda screwed it up by etching half of the knife with it and know the etch doesnt really look even.

How can I safely remove the etch and then reapply it evenly?

Etching is not reversible, however you can polish it to take out the etching and then etch it again OR you can put it back in the acid solution and let it sit for a longer time to make it more even.

The Damascus steel normally use 2 different type of steels so it will etch differently hence give you a contrast to show the layering.

ferric chloride available at radio shack does a better job at etching. you can use lemon juice and vinegar mix with agitation and etch it but ferric chloride does a better and faster etch.after the etch you go over it lightly with 2000 w/d paper and it polishes the shiny part for better contrast.
