Seems like a fairly cheap way to get some really good steak knives. What do you guys think? Any reason that this blade wouldn't be suitable for this purpose?

I meant moran. I know they are not "cheap" but compared to some high end steak knives they are pretty reasonable. And with vg-10 theyd be nice and easy to sharpen.

They can do the job for sure, if you are wanting a good steel to cut food with then go for it. In my opinion I don't see the need of a higher end blade to cut food with, that's just from my experience, I've had the same serrated steak knives for 15 years, they are just regular cheap economy stainless steel blades, nothing fancy, used them for parties, get togethers, and everyday for dinner, sharpen them once a month and they do the job absolutely fine.
If you are willing to pay the price for those blades then do it, nice sweet blades to cut my big meat with. But make sure you look around first, they have a lot of good deals online especially eBay

I don't really see why you would need a nice steel for a steak knife. At least for me, I usually do my cutting on my plate, so a nice steel would either roll almost instantly on a ceramic plate, or cut up a plastic one, so I stick with dinner sets of steak knives. The serrations work well enough to cut it and it's already dull enough not to worry about being ruined on ceramic or ruining plastic.

With that said, I really like the look of the trailing point Moran and have been trying to figure out a way to justify one but I've recently bought a Mule, Vagabond and two Spydie kitchen knives so it would be redundant in the kitchen and I don't do enough hiking to justify it in the outdoors. But if you are in need of a good quality small fixed blade, there is no way to go wrong with the Moran. It's a Spyderco :D

I do not think that any PE knife is a good idea for steal knife. You will dull even the "best and hardest" steel on ceramic plate. But half-decent SE will work just fine and stay sharp for years.

Thanks for all the insight guys. I didn't even think about cutting on ceramic. Like invective I really like the trailing point moran, guess I kinda was trying to justify getting a couple. I went ahead and ordered the trailing point and will use it for food prep and stick to el cheapo steak knives for cutting on ceramic.

I just replaced my old beatup Ikea steak knives with Jean Dubost serrated Laguiole styled ones for $43 shipped they were on sale also (had a Crate and barrel 20% coupon). They come in a few colors. I added an 18/10 flatware set as well to round it out so it was like a 30 piece set or so for 5 for under $200 not bad. Here's a link to the knives. PS they are even cheaper on the bay and I've seen photos of the box on the bay where it noted that it was made in France. I've seen some reviews that they had received a made in Pakistan fakey Laguiole however I've never seen that myself personally.
