Replacing my kitchen knives

I've been thinking about replacing my kitchen knives for some time now. Cost is a factor as I'm retired and really do have a fixed income. I've finally ordered a three piece stater set of Henckels International Classic knives. These knives are made in Spain using German steel and are forged. They appear to be good quality for the price. The 3 piece set will get me started and I'll go from there once I see how they work out.
 
With my sharpmaker. I was a bit surprised that they have a 40 degree (inclusive) blade but I'll keep it at that rather then re-profile to 30 degrees, at least to begin with. I'm hoping they will be an improvement over my Chicago Cutlery, but time will tell I guess.
 
I have had a set for 10 years. Nice knives. They came with factory edge of around 20dps. I changed the bevels to 15dps. They perform much better now.

I've been thinking about doing that as well but I think I'll give them a try as they are first I do suspect that I'll be making that change as well.
 
Received the first three knives today. Time will tell how well they hold up but I will say that the fit and finish is absolutely excellent, I love the weight and they feel great in the hand. At this point I'm extremely pleased with these knives.

I have much older version of the middle knife. It does the job.
