Hi guys. I just picked up a wsko sharpener and have a few questions. Right out of the gates I sharpened about 4 large kitchen knives well, lowering the angle 5 degrees on two of them which took the bite out of the p120 belt.
I bought a Red Label assortment off Amazon that included two 80 grit ceramic belts. The 80 grits are stiff and thick and packed full of particles. The top layer quickly comes loose but there is plenty underneath.
No here is my problem: Using the edge guide with knife fully seated I can raise a burr quickly on the spine first side, but can't seem to get the edge first side low enough for a first pass burr. I get a slight burr after 5 or 6 passes and the first pass doesnt knock the opposing burr down. After working on the edge first side for some time, I think I am wearing the knife unevenly on that side, but still cant get a first pass burr.
Now I'm afraid there is something bigger going on here. It seems that the spine first side has a more aggresive sharpening angle which I can live with. I get a burr using the worn 120 belt at the same angle. I figure all I needed was extra work on the other side, but seeing what appears is an uneven wear, I am in a holding pattern.
Is this a problem with the stiff belt, or a problem sharpening spine then edge first on opposite side?(wish the wsko was bi directional.)
I noticed that with the stiff Red Label belt that the floating wheel rides higher which seems to increase the angle on that side. It definitely takes more pressure to seat the knife completely in the edge guide on that side, and it appears there is more wrap around. Maybe that is why I have more shoulder on the other side, because I am having to reprofile at a lower angle and perhaps I haven't actually reached the appex. Maybe the uneven wear is due to an already uneven flat grind.
Any thoughts? I need to know if I should try the stiff 60 grit ws tool grinding belt or try the 80 grit KO knife sharpening belt available directly from the Work Sharp site. I know these should be flexible, but are a bit more expensive and don't come with free shipping. Or has anyone found a decent flexible low grit belt replacement?
I'm not afraid to go aggressive for the initial sharpening. I would prefer the quickest and most economical option in the long run. I think the KO 60 grit tool grinding belt would be fast and last long and they come 6 per with free shipping, but am reluctant due to this problem.
