What grit should I use when doing edge maintenance? And should I be raising a burr?

If it's just a touchup... all you need to do is use whatever stone or strop you finished with the last sharpening.... usually a dozen or so strokes will bring the edge right back. (One of the advantages of a guided sharpening device).

Beyond that, it goes back in part to what bonzodog said... depends on what amount of work needs to be done. My rule is to try and use the finest stone needed to get it done... no need to go thru "all the steps" you may have used to initially sharpen the knife.

And if the knife was already sharpened on the W.E.... repeating the setup insures you're reaching the edge... so no need to raise a burr. Especially on a quick touchup... you'll want to avoid it.

For me I strop with balsa and diamond paste

Just a few passes on a strop or ultra fine stone is all I do for touchups and maintenance.
