Restoring Old Knives?

I need some advice on how to "clean up" two Schrade's and a EZ Open knife. I have washed them with hot water, and used a water pick to get in the cracks and crevices, but that didn't seem to do a whole lot. What should I do?
 
Depends what 'clean up' means. Is it just dirt/dust/grime, or is there rust also?

My cleaning routine usually involves a good flushing with WD-40 first, to flush out most dirty oil & grime. It'll also loosen up any rust that might be on the surfaces. If the rust is heavy, I'll wrap the WD-40-soaked knife in a paper towel moistened with some more WD-40, and seal it into a zip-loc for a while (2 or 3 days). That'll loosen up much of the heavy rust on the surface. After this, then wash the whole thing in HOT water & dish soap, exercising the pivots while doing so (which hopefully works out any remaining grit in the joints). Then rinse in HOT water, and dry everything thoroughly. Re-apply just a little WD-40 to the joints to displace residual moisture and/or add your lube of choice.

If some surface rust remains after the initial WD-40 soaking, many here have recommended scrubbing with #0000 steel wool and either WD-40 or mineral oil.
 
Wooden toothpicks and coffee stirrers cut to shape work well. A penny also will remove the red rust without removing the patina. I like to use CLP rather than WD-40.
