Restoring SAK Blade

is it possible to remove scratches from SAK blade, and restore it back to its original shine?

Yes. You need to remove the scratches by sanding the metal down to the same level as the deepest scratch, then work up through the grits until finally finishing with Flitz/equivalent metal polish.
 
It's not very hard steel, so 240 would definitely be fine to begin, could even start with 400 potentially. Then work up until you are happy with it before the final polish. Good luck!
 
I usually go the other way, start with shiny and use it until it is all scratched up, then use it some more. Seriously, unless it is a rare discontinued model that you intend to display under glass, why bother? They run that steel so soft that it scratches at the drop of a hat, and my labor to polish one out is worth more than the price of a new one.

I agree with you, I was only asking out of curiosity..So once I acquire such a knife that's worth restoring, I'd know how to do it
