Well The BK-9 did a great job. I should have worn gloves the peppers burned my hands after a while.
Took the scales off the 9 and washed the blade and scales with warm water.

Ahh, some of my favorite things. Fresh fired roasted Hatch Green Chilles, Cold Cerveza and a BK9..

About the only thing that's missing to go with the Chilles is grilled strips of good steak (any kind will do) and some nice Homemade Tortillas to wrap it all up in..:)

Sorry, should have clarified that...

Flour.

Either White or Whole Wheat. Of the commercially made Tortaillas, I like the Mission brand.;)

Substitute the Fresh Roasted Hatch Chilles for the Herdez Salsa Verde in this pic and it's GAME ON!!

One of these days, you guys will have to come visit me in California and taste some real tortillas :D

Rogue,

I hear what your saying but....

We've got some "real' ones here as well. Not everything "Mexican" we eat out here is store bought.:)

There are over 50% Latinos in the town in which I live. Plenty of homestyle ones at the local Tortillerias and Restaurants here... But I'm not going to marry some Mexican gal to get a steady supply of them at home..LOL

THAT would eat into the Becker budget.

The Mission Estilo Casero Tortillas are pretty good if they are heated properly. I eat a lot of the whole wheat ones for health reasons. Plus I like the way they taste.:)

But after seeing that "Texan" burger you came up with, it would be worth coming out there to eat even without any Tortillas being involved..:D

Haha I know I was just teasin ya'll. I have family in NYC who go CRAZY for our Mexican food when they visit but even they have been telling me that there is more and more great Mexican food where they live too, so we Cali and Texas folks definitely don't have the market cornered anymore.

Yep, :eek:I was just reading online the other day about a really good Mexican Bakery outside of PORTLAND..

Surprisingly enough, we actually have a good collection of Mexican restaurants here in Southern WV. (Granted, no where near what we have in Oklahoma, but still, pretty darn good.)

Been on a carnitas kick for the last two months though. Carnitas with chorizo, onions, and cheese sauce, on a flour tortilla FTW!

Holy crap, Hatch green chiles & a Becker knife, awesome! Damn, I just bought about six pounds of hatch chiles myself, & roasted, peeled, & froze them, I should have used my EsKabar, missed pic opportunity (the 9 is overkill a bit, don't you think? Lol, I love it though!) I'm from New Mexico originally, so green chiles are a staple, they are just so freaking good! Most people have no idea that they even exist, & therefore have no idea what they are missing out on! Also, jim62, tell me more about this bakery! I live in Portland, but like I said, I'm from NM, so, I'm VERY interested....

MISSION?!?
Isn't that some California heresy?

Leona de Chimayo ALL THE WAY!!

Dang, I miss me some fresh Hatch Chiles in season... the harvest must be coming in right now.
Used to fish 'em out of 40lb burlap bags in the Albertsons in Santa Fe...

GREEN CHILE CHEESEBURGER!!!
