Rockstead ZDP-189 touching up

They recommend doing it via stropping tapes.
I've a bunch of them: 3000, 4000, 8000 and 12000.
Their edge is mirror finished, so I guess I should start from 8000. Your advice?

Depends on the condition of the edge, I would start at 3000 and progress up.
