Rod builder gone bad

Cheers all.
I have built a lot of fishing rods and would like to try a knife or two.
I have lots of wood working tools and wood. I would like to put a handle on a fixed blade. I have some nice maple burll, can I cut this and use it as scales? Is non resin wood ok to use for a knife? Can I finish it with tru oil?
Any hekp would be nice.

I live in winnipeg.
I am just starting out with this but it seems like something I could really get into. I have enough tools to get me started. I have been looking at Jantz and Kovals to order things as I have not found any Canadian sites so far.
