About 15 years ago I was invited to watch an autopsy at the hospital I worked at. The medical examiner who performed the cutting had an extensive collection of all of 3 knives. This kind of blows the thinking of the gotta have "big block set" of kitchen knives out of the water. If you have witnessed an entire autopsy, you can pretty much compare every single type of cut you do in the kitchen with a knife to what is done there, though kind of a morbid comparison.
ANYWAY, he did not have a steel, rather he had a small 2-3 inch diameter yo-yo looking device he would put on the table, put the knife into the slot where the yo-yo string would go, and run the blade back and forth. This action caused the sharpener to roll somewhat. He called it a sharpener, though I would think it would have been more like a steel, or perhaps ceramic that just straightened the edge out. I don't remember the name of the rolling thing and even back then he said he couldn't find them anymore to buy. That was at the dawn of major internet commerce so perhaps somebody out here knows the name or where to get these little gadets. Thanks for any info!!
