How to the reportedly very hard (66-68) Roselli UHC Steel knives work in the real world. I am sure they hold an edge. Are they "chippie"?

I have a couple of Roselli knives but they don't get enough use to say if they chip under stress. The Hunter is UHC. Beautiful knives. The Carpenter is a nice personal utility. I have a habit of using small Scandinavians around the kitchen. Haven't had any rusting.

As you aren't getting a response here, I doubt Maintenance will give you any more. Since they are typically outdoor knives, how about I move this to Outdoor Gear, Survival Equipment & More. If no one "chips in" let me know and we'll try something else.

I've wondered about this a few times as well. I'm interested to see what others say about them.

Sadly, I have no input of my own though.
