Possible to make half moon shaped rounded GT scales?

What do you just start off with a block on G10 and make them from scratch? Will fine grit sand paper be required to retore the finish on the G10 after desired shape is achieved?

pretty much yeah. If you are making handle scales, break the edges with either a file or sand paper, then use strips of sand paper to shape them to the rounded profile you want. then finish with finer grits of paper and wipe down with some mineral oil or WD40 to remove the last bit of dull dust when done. Be sure to wear a dust mask...G10 fibers (fiberglass) is bad for your lungs.
