Rubber contact wheel shore hardness?

I'm making a big pulley for my grinder (long lasting project) and I would like to know if there is a better Shore Hardness than other for the rubber for our purpose of knifemaking. I have one provider that can obtain any hardness I specify. Any comment is appreciated.

At this point I'm in the mold making stage, aluminium diameter is 410mm (16.1") with rubber it should end at around 430mm (17")

I only know it as being call durometer. I use a 70 durometer on my contact wheels for my knifemaking belt grinder and 90 for my surface grinder. Hope this helps. I think this is standard for knife making.
 
New question, I'm being offered polymer (polyurethane) instead of rubber for the coating of the contact wheel, is this OK?, they offer in 80 shore A
