S110V versus S30V for small gentlemen folder

After long term use of my 2.7" EDC folder, it's lost 2mm of blade from removing chips and dents, and from general wear. It's an excellent knife though, a nice lockback design that is strong and never developed any blade play, and the one-piece G10 scales are very lightweight. So I am going to replace just the blade.

What steel should I use? It must be stainless steel or it will rust in my pocket as I sweat (saltwater). It must be able to hold an edge at 11° per side w/o a microbevel, though barely visible microchips at OK. I shave aluminum and fiberglass with it, easier to control with a thin edge and no microbevel. The blade must be able to last longer than 6 months before looking like a fillet knife, so I need SOME wear resistance but most important is that the edge can hold up.

I'm thinking S110V at 63 rc or S30V at 62 rc. Crucible's datasheets don't say how S30V @ 62 rc would be done, would have to improvise.

Your thoughts on which steel would be better? And don't say ZDP-189 because I couldn't obtain it, it is not for sail. I called them and they didn't speak English, just "no sail no sail".
