S30v and smooth steel

Has anyone used S30v on a smooth steel and what was the result? I ask this because I come from meat
packing experience.
 
With modern steels that have higher hardness its not such a good idea. A ceramic rod would be more effective and less damaging.
 
I've used one and the results are the same as with any other steel that is around the same hardness.
 
A steel works through deformation and burnishing so a softer more ductile steel is a more ideal use of such tool. It's damaging because you can fracture and cause heavy rolls that only seem Sharp when the edge is actually dull. Also because of the process you fatigue the metal making it soft so you are continually steeling to make Sharp again.
