It seems that S30V has become the most common premium steel in production right now, and for good reason. It's very stain resistant, quite tough and has great wear resistance. Of course there are newer "super steels" out there currently, but unless you push your knife to it's limits, most people wouldn't really be able to tell the difference. Of course, that's just my opinion, YMMV. For what it's worth, I have more quality knives in S30V than any other steel, and for an EDC blade, it does it's job admirably.
