S30v neck knife??

Dan,

I recently purchased one of your pimped out S30v forum neck knives. In your testing and professional opinion what angle will S30v withstand for final micro bevel. (does that make sense):confused:

I am trying to sharpen this knife and want to know how thin I can go. My intention for this knife is a slicer. I dont need to baton with it. Think food prep, game processing.

I have heard very good things about this steel and would like input from you the maker. So what angle would you suggest. is it 17 degrees per side, or 15 or maybe 12.5. Let me know what your thoughts are. Where is the point where I need to be concerned with chips and rolling the edge.

S30V is the stainless version of 3V.

Naturally, it will perform very well. It is noticeably harder to sharpen. I think you can go to 12.5 degrees per side with no problems. If it is a dedicated slicer, you could easily go to 10. But that would make sharpening much more difficult.
