Is there a problem with grinding S30V to a thin edge? (Say .015")
I know VG10 cuts very well when ground thin. I have one VG10 .015" (factory edge) and one VG10 I had Tom Krein grind to .010". I like the ease at which they cut.
Of course I don't take these out when doing "rough" jobs, I have plenty of knives for that, but it seems these are all in S30V.

I see no problem if the blade is not abused, like you have mentioned.

The differences between both steel grades, as far as noticable, should be recognised at the very edge.

I had Krein regrind my Kershaw Blue Bump to 0.010" It is S30V, and held up well. The finish on the knife is spectacular, and the edge is a laser. Couldn't be happier. I'll have to see how it holds up, though. I haven't done a lot with it yet.
