S30v / VG10

Am using a knife with a VG10 blade for the first time (Native), and man I am impressed. It holds an edge well, easy to sharpen, cuts really well, it seems to "bite" into wood. Speaking of sharp it takes a hair shaving edge maby better than my other knives.

Tell me again why S30V is better than VG10. There must be a good reason you are fitting some knives with S30V. Pros and cons?

Now I am a rank amateur when it comes knives, but I do love them and I have many of them in my possession including a couple of S30V blades.
 
Hi Gull Wing. Hope that Native is loosening up for you? Glad you like the steel.

VG-10 is an unusual steel in its ability to get very sharp. It is an ingot steel and it performs very well. It has very good edge retention. Among the best in ingot stainless steels.

S30V is a powdered metal which permits higher percentages of carbon and vanadium giving it the advantage of longer edge holding.

We use mostly S30V in our domestically manufactured knives because it is a USA maded steel. We use VG-10 mostly in our Seki made knives. VG-10 is a Japanese made steel.

Thanks for asking Sal. The Native has loosened a little plus my arthritis is better, I can now use it with relative ease.

So the S30V holds an edge longer. I have not noticed my S30V's lasting longer in the edge department, but I think I will have a head to head test.
