s35v, s110v or Cruwear?

Cruwear wins for me. Holds a great working edge that is easy to maintain, doesn’t chip (is tough) and doesn’t rust easily though it will form a bit of a patina.

Depends on what you want from it. Cruwear is super tough and holds an edge well. S35VN is a great all-around steel with excellent edge holding, decent toughness, and great corrosion resistance. S110V has extreme edge retention, low toughness, and exceptional corrosion resistance. Each one has some give and take.
 
In order: Cruwear, S35VN, S110V

Cruwear: Very tough steel that is easy to get a screaming edge and has good edge retention. Not a stainless steel but with 7% chromium, it doesn't stain too easily.

S35VN: Well balanced steel. Good edge retention, corrosion resistance, decently tough for a stainless, and fairly easy to sharpen.

S110V: Holds an edge forever, very corrosion resistant, but not as tough as the other 2. Most difficult to sharpen and that's why I'd pick it last. I like ease of maintenance.
 
s110v for me because I only cut phonebook paper.

Seriously, it all depends on what the knife will be used for, how often, and how comfortable one is with sharpening (and the sharpening gear).
 
I've got the KC pm2 in cruwear, first knife in cruwear. They are right, pretty easy to sharpen and it can reach at least a hht4 level sharpness. Sharpest knife I own
 
Cruwear for me too. Just cuz I don't have any right now, and I have quite a bit of S110V and S35VN.

And Cruwear is a bomb steel.
 
Cru-Wear is the best. I had one knife in it and it became one of my favorite steels that quickly. Holds an awesome edge, plays nicely with a keen or toothy edge, has no toughness issues that I've seen (but I don't use a folder for anything you need high toughness for), acceptable corrosion resistance, and really easy to sharpen.

S35VN is a pretty decent steel too, better corrosion resistance than Cru-Wear, but lower edge retention, and a little harder to sharpen. Still performs pretty well. S110V however is not too impressive as far as I've seen. The difficulty of sharpening is so high that it just stops being fun to work with. The hardest steel I've ever sharpened, only competition from Maxamet, but S110V isn't just slow to put and edge on but also has a tendency to chip on the edge with low grit stones (for me at least).

Another awesome steel I'd recommend trying out if you get a chance is K390. Crazy high edge retention, and still okay toughness and corrosion resistance.
