which steel should suit better?

Depends on what you want to do with it if you are planing on camping with it they both will do the job but 52100 will bet a bit stronger, of course given you have a good heat treat on it . As for edge retention I could not tell you but the 52100 will resist chipping more. But if yo are going to be in a really wet environment, s35vn far exceeds 52100 in this area.

Have this conversation with your maker, a private conversation between both of you should yield what your looking for.

Now if you already discussed this with your maker and dont trust his recomendation, then there is much more info that is required to offer a recomendation.

This^^^. Having said that, the knife you've pictured appears to be more of a sticker than a utility knife. If its purpose is primarily defensive, S35VN should be more than tough enough to meet your needs plus it has the added advantage of being stainless. If, on the other hand, you'll primarily use it as a slicer, I might opt for 52100 due to its strength and its ability to take and hold an edge.
