Which Spyderco models come with a sabre grind? I can only think of the Endura and Delica.

The entire Salt series is hollow saber grind, the SS Police is still saber grind even though the P3 is flat. As far as I know, the FRN Native is still in production and saber, as are the Rescue and Assist. I'd have to go through the catalog to be certain.

The Salts, SS Police, Native and Manix amongst others are all sabre/hollow grind.
The Endura/Delica are sabre/flat grind though, and that's the kind of grind I'm looking for.

I think you're out of luck for current production. The first generation Police was flat saber grind, but pretty much everything now is hollow or full flat.
