I don't know much about wood, but Ironwood is very interesting. Polished ironwood has a "depth" to it that reflects differently as you change the angle of the lighting. Many of the photos don't do it justice. (Edit... I just learned that this optical quality in some woods is called "chatoyance.")
If you use straight-on flash, the wood appears very flat, unremarkable, and nearly monochromatic (and artificially dark). Examples:
But, if you can move your flash off-camera and to the side, you get some dramatically different images:
