I've used my Hiker a time or two to dress ducks, geese and pheasants. I really liked the way the thin SAK blade cuts. And the pretty much 'wash and wear' of Victoinox stainless steel.
Absolutely. I have a Vic Hunter with the serrated gutting blade that I've had for around 15 years and it's has gutted and skinned several deers now. Some were in the field cleanings and some were done at home. It's the best skinning knife I ever owned and the serrated gutting blade still has its original edge. It has never needed sharpening yet!
My Vic Hunter always goes with me to. I have tried alot of different knives and always come back to this. These suckers will get sharp and stay sharp. I will have to say I like a fix blade for gutting because they are alot easiler to clean up. I use a Blind Horse Bushcraft for that.
