I am thinking about getting a SAK, but there isn't one with the funtions I want... so I was wondering if it is possible to buy a couple and switch around the tools?

Sure, just drill out the pins, take it apart, re-pin it, and put the scales back on.

At the same website you can input the tools you want and it will tell you which SAKs have those tools.

Vic also offers this I found (SAK noobie here myself, just got my first two!) on their site, for their products only obviously. I think it's easier than the SOSAK configurator since the Vic site has diagrams of the available tool options. Check out http://www.swissarmy.com/multitools/toolmatch.htm.
