Salmon Spoon Fillet Knives

I have a good friend in Alaska that ordered 2 "Spoon Fillet" knives to use on the King Salmon he catches there. I was not familiar with the Spoon feature. Apparently it is used to remove the Blood (Kidney) along the spine of the fish. I just use my thumb on smaller fish. I had a lot of fun with these guys!

Thanks Justin, They are definitely long blades...

Arm.... There are quite a few companies that make Spoon fillet knives. I just wasn't familiar with them before now.
 
I had the opportunity to handle these knives the other day and I have never seen anything quite like it. Execution was spot on (blade seems a little long, but I am used to small river trout, the stuff they have in Alaska must be BIG). That being said, the blade is fairly stiff for toward the butt and has, IMO the perfect amount of flex as you move down the blade with the flex becoming more evident midway to the tip. Making fillets will be easy. It will no doubt make some quick work of any salmon it encounters. The thicker spine and heel make it more versatile for anything more rugged then just filleting the fish.

The handles are ergonomic and the slight palm swell will make it easy to handle in wet/slippery conditions and I can even see them being used with some gloves.
Fit and finish was spot on.

The blade finish is sandblasted CPM154 ,which I have never seen before, but was uniform and well done. I think this finish will hold up better than any 800/1000 grit hand rubbed and should hide scratches well. I would be really curious to see these knives in a year to see how well the finish worked out. Whoever is getting these is one lucky guy.

The spoon....well, it is exactly as it is intended. What a grand idea!
 
Those are incredible. For the King Salmon and large Steelhead we get in the Northwest I believe they will be a dream. On the off season, I can see them working really well around the grill too.

That was a85-90lb halibut i pulled up about a month ago while kayak fishing. I have a few other fillet knives but i have started getting spoiled with Ryans knives and well.....
Ryan btw i should have that handle finished off and some pictures some time the next week.

Cool Ryan. I've not heard of "spoon filet" knives either. The blades do look VERY long, but obviously they are what is needed by those that use them.
