salt 1 SE vs delica SE

I'd like a low key knife with a serrated blade. If I get the Salt 1, I'll likely dye the handle blue to match my jeans. I am considering a Delica SE because of the steel liners and vg10 steel.

So, my questions among those that have had both. My tasman salt deploys more smoothly than my delica or endura. Is it the case then, that a Salt 1 deploys more smoothly (usually) than a delica? Also, I hear that serrated H1 steel holds a fine edge. Does it hold an edge better than a serrated vg10 blade? Also, I hear that the Salt 1 maintains thickness to the tip and so should be more robust. Is this true?

Any other pros/cons of the choice that someone with more experience may care to add? To give a background to this, my dog was attacked and nearly killed a few months back and just a few weeks ago I was bitten by another dog (and am taking a course of rabies shots as a result). I carry pepper spray, but want a last ditch weapon in case things go terribly wrong. But I want this knife to be something that will not cause undue hand waving before or after it is employed in dog defense.
