This is a Japanese style chef's knife, also called a gyuto. The blade is 9.5" long. AEB-L core steel at 62-63 Rc, with stainless damascus in bubblewrap pattern in san-mai. There's a mokume guard and mokume bolts in a mortise tang construction.
