Just finished the first Sushi knife I ever made!
San Mai Damascus Sashimi / Sushi Knife
San Mai damascus in 1010/304 with a 5160 core.
18" overall length, 12" blade.
Micarta and Ebony handles with acetate spacers. Mokume (copper/brass/304) bolster and buttcap.
