Can anyone tell me the steels used in Cold Steels San Mai III blades ??

Yes I'd heard but was wondering if there was something new. Going to the point of making expensive laminated blade and using AUS-8 seems a waste .Not that AUS-8 is bad [I think my Master Hunter is a great knife] but I would make a different choice. I have on order, a Fallkniven S-1 with it's core of VG-10 which seems to make more sense to me.

Yeah, you'd think Cold Steel would "evolve" with the times.

Fallkniven's laminates are pretty darn good IMO. Just remember their grinds are usually for slicers, not choppers (on the ones I handled and used).

Aus-8 and 420 san-mai is probably the toughest stainless steel you would ever use, though I don't know what hardness the Aus-8 is. As a little known secret, Aus-8 is probably the toughest high hardness stainless steel on the market. The 420 outsides will only add to the toughness. I personally don't like Cold Steel knives though.
