Sanding knife too much?

Hello all, so I just got a new fixed blade in the mail today and I thought I'd vinegar electric etch a design on it side of the blade. After I finished, unfortunately I wasn't too satisfied with it. So I decided to use 200 grit sand paper to remove it. After a while I got it completely off but I realised it took off a bit more metal due to the top bevel being more smooth and rounded.

I tried to sand the other side as well, now it's almost mirror polish but if I hold it out I can still see slightly more is sanded on one side.

Will this affect the blade long term? From batoning or any heavy duties?

200 grit is pretty harsh. What type of blade steel is it?
80CrV2 59 HRC.

It's the sanding on one side is slightly noticeable like maybe 1/4 of a mm but the knifes thickness is 4 mm

You didn't remove 1/4mm of steel hand sanding, i don't care how long you sanded it for...
Sharpen it back up and use it! Knives are designed to have small amounts of metal removed periodically.
 
200 grit is quite coarse for something like that. A high grit wet/dry sand paper or I would have started on a loaded strip.
