I just picked up one of the latest GEC 77's in Red Saw Cut Bone and the saw cut on mine is irregular, has anyone sanded the saw cut smooth? I'm wondering how hard the bone is. I was thinking of using scotch bright and working down to progressively finer grit's then polish to avoid damage to pins. Any input would be greatly appreciated.

It's supposed to be irregular.
You would need to use sandpaper in varying grits, but you won't be able to sand around the pins.
It's best left alone.

Also... How deeply does the dye penetrate into the bone? I have no idea, but I'd be concerned about exposing undyed bone and ruining the appearance. Although I guess you could always re-dye it.
