Sandvick 12C27 or carbon V

Which steel would you choose ? Which can achieve a keener edge and better edge holding? thanks
 
CARBON V will hold a better edge than the 12c27, but it can rust
12c27 aint bad at all, and its stainless
both are good , i would go with carbon V , but,its your choice...

Then I'd go with Sandvik.

Martensitic stainless chromium steels such as Sandvik 12C27 has due to small hard carbides in the structure an ability to stay sharp longer than carbon steel, such as Carbon V.

However the Carbon V is tougher and will withstand plastic deformation better than the Sandvik steel.
