Hi

I have seen people use a Santoku (Santuko) exclusively in the kitchen instead of a cook's knife a paring knife and everything else.
Do you have experience with one?
Do you recommend a particular brand that does not cost more than 100$ or so?
Whats the nest blade length for one in your opinion?

Thanks

I really like the design. I picked up an el-cheapo one at Canadian Tire IIRC just to test out the concept of it. I'm a big fan of having a kitchen knife with a very broad blade and a blunt tip.

My brother swears by his Wusthof Santoku knife - IIRC it's one of two kitchen knives he uses at all. I honestly don't have any personal experience with good quality santoku knives, though.

They were designed in Japan as a multi-purpose knife for cooking Western Style food. I love my santoku for vegetable prep. I use my gyuto and chinese cleaver, and pairing knife for everything else.

That is my main kitchen knife, the one I have is a lower end J.A. Henckels. I think I paid around $60-$80 for it. The blade is very thin and the handle is awful. It's overall cutting edge is 8". I do find that it need sharpening often, luckily the Sharpmaker produces a great working edge quickly. I've thought about picking up a Shun Santoku 7, they cost around $170 from various online stores.

I have the Shun and it is a great kitchen knife. It was very sharp to begin with and held that original edge for a long time. Sharpening is easy. It is almost twice your stated price but it is a really good tool.
