A ultrathin Santoku in m390 would be nice indeed. Unfortunately, getting stock that thin is pretty much non existent at the moment. Also not sure if the added cost would be worth it as s35vn holds a pretty darn good edge when heat treated properly. It hardly requires much sharpening under normal day to day kitchen use. Most of its performance is wrung out through edge geometry.
