Hello friends, today I finished santoku at hand. After receiving the request of a chef working in UK, I wanted to make a tool, cutting edge lightweight and durable materials. 12C27 steel, tempered boards as a 58-59hrc, Swedish steel high reputation, good retention, high toughness and good resistance to oxidation. Without highlighting anything, takes good note at all, I think it's a fitting steel kitchen. For the handle I chose titanium grade 2, light and stainless, perfect to protect boxwood, I consider magnificent for its lightness, hardness, resistance to wear and tear and practically no pore. I have a nail that for a year does almost everything in my kitchen, it has been wet days, has been washed with detergents .... and the box remains intact. I think as wood work is excellent.
Has a size of 200mm blade, blade 50mm and 2mm grsor, emptying plane to the back, satin finish. 125mm oval handle and soft, the pin is stainless 416. A real featherweight.
