I have been wanting a Santoku for myself and finally made one can't wait to try it out.

1/8" ATS-34
12' OA
7" B hollow ground
Corian "Nocturne" handle with mosaic pins

i have a hinkel kitcen knife like that,thought it was pretty nice too, but i must say, urs blows it out of the water, a beautifl piece man
 
Beautiful knife! How did you get those "cuts" into the blade? They're to stop the food sticking to the blade right?
 
Thanks for the nice comments! Yes the vertical grooves are suppose to break the vacumm and keep food from sticking. Never used one but am anxiuos to try. I think I will like it even if food does stick some as a veggie chopper like chef's knnife. I put them in one at a time (both sides) while in the annealed condition with a Foredom and a carbide burr tool, then came back after HT and ran a stone in the Foredom through them. It would sure make it easier to make without the grooves.

my girlfriend is an avid chef and i just bought her a santoku knife. i wish i would have seen this first! how much would you charge for one of these beauts?
 
Very nice. I'll be sure to look you up when I need more knives.

One suggestion would be to replace the mosaic pins with stainless pins if you're making these for anyone in the culinary industry (myself). The mosiac pins are nice and I wouldn't mind having one for my personal kitchen, but they may harbor bacteria over time. Same thing with the filings on the top. Basically the basic model of that beauty and it would be good to go. :cool:
 
mr.trooper, there are many knifemaking suppliers that have them...search for mosaic pins.

sierra11b, good point, this is for my personal kitchen, tierd of watching Rachel Rea and others using them and not having one. Filework does nothing functionaly for this style knife, just looks. I almost put stainless pins in it to kind of match my Cutco knives then just ended up with the mosaic.
