Just have to post about how impressed I am with the SAR 4 as an all in one knife.I would not thing twice about chopping with it and it is like a razor in the kitchen.
Wife just had me the cut and trim a pork loin,she has every kitchen knife we have trashed.I really don't think even infi could stand up to her.The SAR 4 went through the meat like it wasn't even there and the edge shaved the silver skin and fatty sinew just like a straight razor.
This is just one awesome knife.
