what are the different benefits of a blade that is satin or stone washed?

satin vs. stone wash

Well, the obvious advantage of a SW blade is that it can get pretty scratched up and not look too bad, a satin blade will show every scratch. I used to not like SW blades, i have come to like them though, hey, if its good enough for the very fine CRK Sebenza blades, its good enough for me. 
I would say that if the knife is for display, theres nothing wrong with satin, if youre going to use it, try SW.
