Like all of you I like to keep my blades sharp. But I don't like to see the blades ware away. What's the best way to keep them sharp and use them without grinding away too much steel?

No, there is never any reason to use those scrapers. Even a $2 pocket stone is better than those things. In a pinch you'd be better off using the bottom of a ceramic coffee cup or. Piece of sandpaper (400 grit or finer).Haha...yes, if your knife costs you more than 10-20 dollars, stay away from cheap 'V' carbide sharpeners...though in an absolute pinch they are useful on a cheap steel
