For this purpose the knifes will be used to cut strop type leather. Will any other knife custom made with any steel available, in any grind, sharpened with any set of stones be able to cut as well as a scalpel or Olfa knife for leather.

The reason I ask is because I have a knife thats custom made with 154cm stainless steel, convex edge and I believe its sharpened well only with a 240 american grit stone. same sharpness as the OLFA. but the OLFA has the advantage that nearly any pressure needs to be applied and cuts smooth, also very thin blade.

Is there any knife out there that can match the olfa knife that I have, even though its 10 dollars for the knife I can't imagine any knife being better in this situation because of how thin and uniform the knife is.

Geometry matters.

Yeah, +100 for this.

M390/CPM20CC/CTS204P at 63 Rockwell in a 1/16" or thinner full flat ground knife will cut nearly forever in leather. Same knife in 3/16" stock won't cut well to begin with.

The right tool for a specific job will always make the task safer.

I bet a scalpel would be great for the job but the blade may not stay sharp quite as long.

Ibought a little retractible utility knife with the bleade that you break off every 1/4 inch. I use it on cardboard and leather and its cut very well.
