Most Scandinavin manufacturers seem to use Sandvik 12c27 for thier stainless and they say so, however for their non stainless usually they say just " high/ plain carbon steel" or something like that. Is there a " standard" carbon steel used and what is the typical carbon content?
Yes I know heat treatement matters and I know Roselli's "speciale" UHC is 1.5 - 2% carbon (I find a stated range of +/- .5 % strangely wide and not helpful but whatevere), I am just interested in the "typical " steel used in Scandi knives- if there are differences then I woulde be interested in ones used by Frosts, Jarvenpa, Kellam, Erickson, etc, the most familiar co's.
