Who makes and which model currently tends to be the most razor sharp right out of the price in the $125.00 price range?

I think the sharpness out of box varies quite a bit. Most of my Spydercos have been pretty sharp out of box, but only my Caly 3 was very sharp. My mini griptilian was very dull and had an uneven bevel when it was new, but others' mini grips have been sharp. I don't have that many knives, but I get the feeling that Spyderco grinds their bevels at a more acute angle than other brands, which would make the knife easier for you to touch up if you're using a system like the sharpmaker. But I have Benchmades that "fit" the sharpmaker out of box too.
In short: I don't think you can be guaranteed a "scary sharp" edge from factory and you'll have to maintain the edge to keep it sharp anyhow.

Secondary market large Hogue folders or medium versions for around $125. Also aluminum handled versions in your price range. Mine came with a mirror polished edge that was literally scary sharp out of the box. Love it.

Out of the box doesn't matter so much as the out-of-box edge will be gone very quickly... a sharp slicing knife should have proper edge geometry which means acute angles, but "out-of-box" really doesn't matter as a "scary sharp" edge will be gone after a short period of actual use...

Exactly. The second you cut up even a few cardboard boxes your scary sharp edge will be absolutely nonexistent. Take your $125 and spend $75 on a knife and the other $50 on a spyderco sharpmaker and get and keep that knife MUCH sharper than it ever was from the factory.
