Im interested in a new 6-8" knife and really like some of the Busse and Jericoh Blade Works knives. I know Jericoh uses 1095 steel and Busse uses INFI steel. All you steel freaks feel free to chime in on the pros and cons of each. Thanks in advance.

You are better off with a forged knife that is heat treated in different spots...http://www.gripsandknives.com/ProductDetails.asp?ProductCode=tac1&CartID=1
This baby is cheaper 7" and made by an ABS master blade smith...When they forge it they have something called a distal taper that gradually thins the back of the blade to a needle point...the edges are also rounder and create less stress on things...the tang is not heat treated as hard in the back do the handle can absorb shock more than the blade can...there is a lot of reasons why forged knives are better. This is a good video that teaches you the difference...keep in mind it is NSFW because this other blade smith curses a lot on a pedantic diatribe. http://www.youtube.com/watch?v=n4fXt9hWvRE

Point being a forged knife is different than one that is made in the stock removal method and tailored to it's use. One that just grinds away a chunk of metal until it looks like a knife is not a bladesmith...he is a knife maker...I am not saying they are all bad just different and they are limited on what they can do or do not..where one that forges his own steel can make just about anything for it's intended use.

Jharp, there are MANY threads covering the 1095 vs Infi debate, just look around and read, read, read.... Also, if you like Busse Infi, try their other companies...Swamp Rat and Scrap Yard. Their steels are truely impressive and less expensive. Infi is the best overall steel but it is not the end all steel. Depending on blade shape and intended purpose, should dictate what steel attributes you need.

dhaines....there are MANY Busse knives that can be had for less than gripsandknives link you provided!!! And a knife maker can maker can also make any knife for any intended purpose. And it has been said numerous times here that forging a knife doesn't produce a higher quality knife and it is more about the tradition of knife making. What "limits" can a knife maker not do over a forged blade? I have seen ground knives with all the features you attribute to a forged knife........

You seen ground knives with a distal taper? You seen ground knives with the handle tang heat treated differently than the tip, edge and spine? I am sure it is possible but where do you find these ground knives I will purchase them!

David's work looks phenomenal from what I saw on his website...he is a real bladesmith that can do it all from stock removal, forging, making his own Damascus...thank you for that referral.
