This is a test run. We do not know what the demand for a 6.5" chef knife will be without testing the waters first.

Therefore, this could be your only chance to score one of these, or they may return in the future, depending upon demand and production capacity.

Here's some important info about the Alpha Chef 6.5 Test Run.

Brother Dan ground these blades extremely thin at approximately .010" thick at the edge prior to sharpening.

The thickness of 3 Post-it notes is .0125" thick meaning that three Post-it notes are 20% thicker than this edge is prior to sharpening!

It's nice to know that if you ever dull it . . . You might not know it ! ! !

This, approximately 6.5" long AEB-L stainless blade at .110" thick, sports a 1 1/2 inch high saber ground bevel that is ready for anything that your kitchen can throw at it!

The Alpha Chef 6.5 weighs in at an incredibly light 5.8 ounces adding to its nimbleness and ease of handling!!!!

The Alpha Chef 6.5 is solely designed to be a slicer!

It is not recommended for prying or throwing because the tip is scary thin!

Our NEW, Resiprene-C Handle design is everything you could hope for in a handle where maximum comfort is desired.

It is heavily rounded for comfort and is extremely ergonomic!

This Res-C handle provides a non-slip grip and is made from our softer Res-C material.

The finger ramp provides excellent control for either your thumb or index finger!

Why yes, thank you, I think I will. Twice.

Editing: Based on Nathan's observations, AEBL's toughness allows for greater edge stability, meaning you can run it thinner than steels that aren't as tough. That should parlay into better edgeholding than you might expect based on internet numbers for AEB-L. Then add in that the edge will clean up well (and fast) on a steel or ceramic steel, and you have something really special here.

I'm also really thrilled to see the Busse homestead bringing in new materials and designs. This bodes well for all of us! CPM-3V, Magnacut, AEB-L... SR101 is dead... Long live its successors!

Definitely in for one or two. My chef 8 is awesome but this size will get more use.

It has a bit less belly than I typically consider using but I figure these guys know more about knives than me.
